Growing up, my mother made a huge variety of classic Palestinian dishes with a vegetarian or vegan friendly variations to suit my father's diet. When I finally left Chicago, where we grew up, and moved to Seattle in 2013 with my wife Jonnie, we no longer had easy access to my mom's delicious cooking and so we spent the year recreating her recipes so we could enjoy them in our new home.
