All Mauritians will enjoy this book. I had the opportunity to prepare Napolitaine for different cultures and nationalities; all of them loved the taste, texture and appearance. Over the years I have adjust the recipe to make Napolitaine tender and less sugary. I have included in the book new ideas for decorating Napolitaine for weddings presentation and for all festivities you may have in the future. This book is also a tribute to Pastry Chefs who have contribute to the success of Napolitaine. Relatives, families and friends have learned how to make it from me; they are still making it and enjoy the simplicity of the recipe.
